The Prized Black Truffle (Tuber melanosporum), is the King of the blacks, the only one that can be called black truffle. Thanks to its culinary versatility it has become the workhorse of Nouvelle cuisine; the French, who call it Truffe Noir, have always cherished it and used it extensively in their cooking. It has a subtle, sweet and refined aroma, a black exterior, and purplish black flesh with white veining. It ripens in winter (December-March) in contact with an oak, hornbeam, or hazelnut tree. Its exceptional performance as a cooking ingredient has led to it being highly prized around the world. In Italy, it is harvested and selected in the Umbria, Marche, and Abruzzo Regions.
